Here’s the verdict: induction is the better all-around range for most modern kitchens — faster, more precise, more efficient, far easier to clean, and it keeps your kitchen cooler. Gas still wins for cooks who want a visible flame, instant high heat for wok cooking and charring, and a stove that works during a power outage. On repairs, gas is simpler and cheaper to fix (valves, igniters), while induction is more reliable day-to-day but pricier when its electronics fail. For a typical Miami home, induction is the smart upgrade; for a serious flame-cooking enthusiast or storm-outage worrier, gas keeps its appeal.

I’ve serviced both across South Florida for 11 years. Here’s the honest breakdown.

How they cook

A gas range burns natural gas or propane under your pan — open flame, instant visible heat, and the responsiveness chefs love. You see exactly what you’re getting and adjust it instantly.

An induction range uses an electromagnetic field to heat magnetic cookware directly. The glass surface stays cool; the pan heats almost instantly. Induction actually matches or beats gas on responsiveness and boils water far faster, while delivering precise low simmers that gas struggles with.

Performance: closer than you’d think

Old wisdom says gas is king. Modern induction has changed that. Induction boils water faster than gas, holds a precise low simmer better, and delivers high heat without the wasted energy a flame throws into the air. Where gas still leads: char and wok work — an open flame that licks up the sides of a pan, and high-heat searing that some cooks prefer. Gas also handles round-bottom woks and flambé in ways a flat induction surface can’t.

For 90% of everyday cooking, induction is as good or better. For specific high-flame techniques, gas has a real edge.

Cleaning and comfort

Induction wins easily. One flat glass surface, spills don’t bake on (the top stays cool), and there are no grates or burner caps to scrub. Gas means grates, drip pans, and burner heads — far more cleaning.

In our climate, induction’s efficiency is a genuine comfort benefit: less waste heat into the kitchen means your A/C isn’t fighting the stove. Gas dumps a lot of heat into the room.

Factor Induction Gas
Boil/heat speed Fastest Fast
Simmer precision Excellent Good
High-flame/wok char Limited Best
Cleaning Easiest Hardest
Works in power outage No Yes (with manual light)
Kitchen heat Low High
Cookware Magnetic only Any
Repair cost Higher Lower

Running cost and the outage factor

Gas is often cheaper to run where natural gas is inexpensive, but induction’s efficiency narrows the gap. The bigger practical issue in South Florida is power outages — induction is dead during a blackout, while a gas burner can be lit with a match. For hurricane-season peace of mind, that matters to some buyers.

Repair reality — what breaks on each

Gas ranges are mechanically simpler. The repairs we run most are a failed igniter (the oven won’t light or clicks forever), a worn burner valve, or a clogged burner port. These are inexpensive, common parts. Gas ovens do have a safety valve and igniter that wear, but overall gas is cheap and predictable to fix. The trade-off is gas safety — a gas leak or valve issue is something you want a pro on immediately.

Induction ranges are electronics-heavy. In normal use they’re reliable — there’s no flame, no igniter, fewer mechanical parts to wear. But when they fail, it’s usually a power module, an induction coil, or a control board, and those cost more than a gas igniter. Induction also detects cookware and throws error codes for overheating or fan faults. Fewer machines, more expensive parts.

Both share the oven below the cooktop, which has its own common failures — bake/broil elements (electric induction ovens) or the gas igniter and safety valve (gas). We cover oven-specific issues on our oven repair page.

If you’re choosing the cooktop surface separately, compare induction vs electric cooktop. And if the real question is fuel type generally, see gas vs electric range.

South Florida considerations

  • Gas availability. Many Miami homes and especially condos don’t have a gas line. Running one (or using propane) adds cost and HOA hurdles. Induction needs only a 240V circuit.
  • Electrical capacity. Induction draws heavily — confirm your panel can handle a dedicated 240V circuit, common in older homes.
  • Outage planning. Induction won’t work in a blackout. Factor that into hurricane prep.
  • Heat and A/C. Induction keeps the kitchen cooler — a real plus in our climate.

Which should you buy?

Choose induction if you want the most efficient, precise, easy-to-clean range, a cooler kitchen, and you have (or can add) the electrical capacity. Accept the magnetic-cookware requirement and the pricier-but-rarer repair. For most modern South Florida kitchens, it’s the better choice.

Choose gas if you cook with high flame and woks, want a stove that works in outages, already have a gas line, and prefer cheaper, simpler repairs. It remains a great range for the right cook.

Either way, brands like GE offer strong options in both fuels and are widely serviceable here.

FAQ

Is induction better than gas?
For most everyday cooking, yes — induction is faster, more precise, more efficient, easier to clean, and keeps the kitchen cooler. Gas still wins for high-flame wok cooking, charring, and working during power outages. The best choice depends on how you cook and whether you have a gas line.

What breaks more often, gas or induction?
Gas has more frequent but cheaper failures — igniters, burner valves, ports. Induction is more reliable in daily use but costs more to repair when its power boards or coils fail. Overall, gas is cheaper and simpler to service.

Does induction work during a power outage?
No. Induction requires electricity. A gas burner can be lit manually with a match during an outage, which is a real advantage during South Florida hurricane season.

Do I need a gas line for an induction range?
No — induction needs only a dedicated 240V electrical circuit, no gas line. That makes it easier to install in condos and homes without gas service, though you should confirm your electrical panel can handle the load.
